Aioli

Ingredients:

  • 4 Garlic cloves
  • 2 Egg yolks
  • 1 Pinch Salt
  • 1 Cup Good−quality olive oil
  • 2 Tablespoon Good−quality olive oil

 

 

Procedure:

  1. Place the garlic in a large mortar and crush.
  2. Add the eggs and incorporate.
  3. Season with salt. Slowly stir in the oil, a little at a time, until all of the oil is incorporated and the mixture is like a thick mayonnaise.
  4. This recipe yields about 1 cup aioli.
