Ambrosia Salad

Ingredients: 2 grapefruits, sectioned and sliced 4 nectarines, sectioned and sliced 1 c chopped pineapple 1/4 c unsweetened, grated coconut  Procedure: Stir all ingredients together into serving bowls. Reserve 1 Tablespoon of coconut and sprinkle on top.

BLT Salad

Ingredients: 7 slices bacon – cooked crisp,drained and crumbled 1 cup chopped lettuce 1/8 cup chopped onion 1/2 medium tomato –chopped 1 tablespoon mayonnaise Procedure: Stir mayo into lettuce,onion and tomato until evenly coated. Toss in bacon.
