Ingredients:
- 1 T olive oil
- 1 1/2 c onion, chopped
- 1 1/2 c bell peppers, chopped
- 2 cloves garlic, minced
- 4 c cooked pinto beans
- 3 c diced tomatoes
- 6 oz tomato paste
- 1 1/2 c water
- 1 c fresh mushrooms, sliced
- 1 T chili powder
- 1 1/2 t cumin
- 1 t oregano
Procedure:
- Sauté onion, green pepper, and garlic in olive oil.
- Transfer to crockpot and add remaining ingredients.
- Cook over low for 1-2 hours.
