Ingredients:

Mexican Corn Bread

Mexican Corn Bread

  • 1 cup cornmeal
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • 1 can cream style corn
  • 1 chopped bell pepper
  • ¾ pound grated cheese

 Procedure:

  1. Stir eggs and cream style corn.
  2. Add dry ingredients.
  3. Pour half of batter into greased pan.
  4. Sprinkle chopped bell pepper, grated cheese.
  5. Pour remaining batter over first layer.
  6. Bake at 400 °F for 30 to 40 minutes.
